Omelette with Leek
Ingredients:
4 eggs
4 leeks
salt
pepper
red pepper flakes
olive oil or sunflower oil
Preparation:
Clean and cut the leeks as ring-shaped. Pour 2-3 spoons of oil into a nonstick pan and brown the leeks (you can add green capsicum, too). As the leeks are browned, take a deep bowl and scramble the eggs with salt, pepper and red pepper. Then pour the mixture into the pan and cook it. You can serve the omelet with fresh mint and parsley.

PS: If you wish you can use tomato, too. After the leeks (and the green peper/capsicum) are browned, you can add grated tomato to them and after 2-3 minutes add the scrambled eggs and cook.
